Ginger Honey Lemon Chews

Soft homemade ginger chews made with fresh ginger, honey, and bright lemon zest. Naturally soothing, lightly sweet, and perfect for calming sore throats or enjoying as a warming treat.

Ingredients

  • 1 cup fresh ginger finely grated
  • 1 cup water
  • ¾ cup honey
  • 1 tablespoon butter
  • 1 –2 teaspoons lemon zest
  • Optional: 1–2 teaspoons fresh lemon juice
  • Pinch of salt optional, but recommended

Instructions

  • Add grated ginger (or you can blend in a blender for a minute) and water to a small saucepan. Simmer for about 10 minutes to extract flavor.

  • Strain the mixture if you want smooth chews (optional).
  • Stir in honey and cook over medium heat, stirring often, until thick and syrupy.

  • Add butter and stir until melted.

  • Mix in lemon zest (and lemon juice if using) and salt.

  • Pour onto parchment paper or a silicone mat and let cool slightly.
  • Cut into small bite-sized chews once set.

Notes

Store in the fridge in an airtight container for up to 1–2 weeks.
Dust with powdered sugar or coconut sugar if sticky.
* Adjust ginger and lemon to taste for stronger or milder flavor.
