Ingredients
2large zucchinis
2eggs
1/2 cupgreen onions
3/4cupflour
1/2 cup sourdough starter
1 tspbaking powder
1.5 tspsaltdivided 1 tsp and .5 tsp
1/2tspblack pepper
oil
sour cream
Instructions
Grate the zucchini on the box grater into the fine mesh strainer. Be sure to place a bowl under the strainer.
Add salt to the grated zucchini and let it sit for 10 mins.
After 10 minutes, squeeze out the liquid from the zucchini using your hands. You can also use a cheese cloth to help get the most liquids out as possible.
Then add the rest of the ingredients. Be sure to mix after each ingredient added.
Heat up some oil in the cast iron skillet.
Fry each fritter for about 5 mins on each side or until crispy and golden.
Enjoy with some sour cream, or any dip of your choice.
