Ingredients

  • 4 tbsp 1/2 stick melted unsalted butter
  • 1 cup flour
  • 3 tbsp sugar
  • 1/4 tsp vanilla powder or 1 tsp vanilla extract
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 cup buttermilk 4%
  • 1 egg

Instructions

  • Melt 4 tbsp of unsalted butter on the cast iron skillet you will be using to make the pancakes. Let it cool as you mix the other ingredients.
  • In a mixing bowl whisk together flour, sugar, vanilla powder, and baking powder.
  • In a separate cup measure out buttermilk and add baking soda into it. Mix well.
  • Into the flour mixture, mix in a farm fresh egg. Then add in the buttermilk with the baking soda and mix just enough to incorporate all of the ingredients (be sure not to over mix or the pancakes will become flat).
  • Whisk in the butter quickly but try not to over mix again.
  • Heat up the cast iron skillet and fry small pancakes of about 1/4 cup of batter each or you can make larger pancakes with a ladle.
  • Serve warm with toppings of your choice.
  • Enjoy!
