Fluffy, Cheesy Breakfast Burrito

Create scrumptious breakfast burritos by air-frying bacon and tater tots, whipping up flavorful scrambled eggs with dill or parsley, assembling the burritos with layers of cheese, bacon, and tater tots drizzled with Sriracha, and pan-frying to perfection.

Ingredients

  • 4 Eggs
  • 1 lb Bacon
  • 4 Potatoes or tater tots
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 cup Milk
  • Parsley/Dill
  • Tortillas
  • Sriracha
  • Cheese shredded for assembly and melting

Instructions

  • Fry the bacon on a skillet, air fryer, or in the oven.
  • Air-fry tater tots for 10 minutes at 380°F. OR boil the potatoes, and then fry on the skillet.
  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Scramble the eggs on a skillet.
  • Incorporate dill or parsley into the scrambled eggs and mix well. Or just sprinkle on some prepared eggs.

Assemble the burritos.

  • Lay out tortillas and layer with cheese, scrambled eggs, bacon, tater tots, and a drizzle of Sriracha.
  • Add another layer of cheese on top (this will help your burrito to stick together once melted.).
  • Fold and assemble the burritos.
  • In a dry or slightly oiled skillet, fry the assembled burritos, seam side down, to ensure they stay together.
  • Serve hot and enjoy your delicious breakfast burritos!
