Fluffy, Cheesy Breakfast Burrito

These are sooooo good! My husband had me make these for breakfast for a month straight! Made with light fluffy scrambles egg, cheese, bacon, and tater tots. This burrito is so easy and so versatile. One day I will add Tostitos nacho cheese, other days I would add cilantro. It’s just whatever I have on hand that day. You can eat it with hot sauce or as it.

Ingredients:

  • Eggs: Eggs are a versatile and essential ingredient. In this recipe, they serve as the main protein source. You can scramble, fry, or make an omelet with them for the burritos.

How to freeze the breakfast burritos:

You can definitely freeze them for up to 2 weeks. Wrap them in parchment paper and then foil.

How to make breakfast burritos:

  1. Fry the bacon on a skillet, air fryer, or in the oven.
  2. Air-fry tater tots for 10 minutes at 380°F. OR boil the potatoes, and then fry on the skillet.
  3. In a bowl, whisk together eggs, milk, salt, and pepper.
  4. Scramble the eggs on a skillet.
  5. Incorporate dill or parsley into the scrambled eggs and mix well. Or just sprinkle on some prepared eggs.

Assemble the burritos.

  1. Lay out tortillas and layer with cheese, scrambled eggs, bacon, tater tots, and a drizzle of Sriracha.
  2. Add another layer of cheese on top (this will help your burrito to stick together once melted.).
  3. Fold and assemble the burritos.
  4. In a dry or slightly oiled skillet, fry the assembled burritos, seam side down, to ensure they stay together.
  5. Serve hot and enjoy your delicious breakfast burritos!
