Instructions
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare Potatoes:
Wash and scrub the potatoes. You can peel them if you prefer, but leaving the skins on adds a nice texture.
Cut the potatoes into bite-sized chunks or wedges, ensuring they are relatively uniform in size for even cooking.
Seasoning:
In a large bowl, toss the potato chunks with olive oil, salt, pepper, and any optional seasonings like garlic powder, paprika, or herbs. Ensure the potatoes are well-coated.
Arrange on Baking Sheet:
Spread the seasoned potatoes in a single layer on a baking sheet. Use parchment paper or lightly grease the sheet to prevent sticking.
Roasting:
Place the baking sheet in the preheated oven and roast for about 30-40 minutes, or until the potatoes are golden brown and crispy on the edges. Stir or flip the potatoes halfway through to ensure even cooking.
Serve:
Once the potatoes are cooked to your liking, remove them from the oven. You can sprinkle a bit more salt or herbs if needed.
Optional Garnish:
Garnish with fresh herbs like chopped parsley or chives before serving, if desired. Sour cream and/or cheese is amazing on these potatoes.
Enjoy:
Serve the oven-roasted potatoes hot as a side dish alongside your favorite main course.
