- 2 pounds of potatoes; about 5 large potatoes (I love Gold Yukon)
- 2-3 tablespoons olive oil (or any other oil – avocado oil will work great)
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon badia complete seasoning
- Fresh herbs like rosemary or thyme (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare Potatoes:
- Wash and scrub the potatoes. You can peel them if you prefer, but leaving the skins on adds a nice texture.
- Cut the potatoes into bite-sized chunks or wedges, ensuring they are relatively uniform in size for even cooking.
- Seasoning:
- In a large bowl, toss the potato chunks with olive oil, salt, pepper, and any optional seasonings like garlic powder, paprika, or herbs. Ensure the potatoes are well-coated.
- Arrange on Baking Sheet:
- Spread the seasoned potatoes in a single layer on a baking sheet. Use parchment paper or lightly grease the sheet to prevent sticking.
- Roasting:
- Place the baking sheet in the preheated oven and roast for about 30-40 minutes, or until the potatoes are golden brown and crispy on the edges. Stir or flip the potatoes halfway through to ensure even cooking.
- Serve:
- Once the potatoes are cooked to your liking, remove them from the oven. You can sprinkle a bit more salt or herbs if needed.
