Ingredients:

  • Starter: The starter provides the distinctive tangy flavor and adds gut healthy bacteria. You can use sourdough discard.
  • Flour: Flour serves as the main dry ingredient and provides structure to the tortillas. Generally, all-purpose flour is used.
  • Salt: Salt enhances the flavor of the tortillas and also helps to regulate the fermentation process by controlling the activity of yeast and bacteria in the sourdough starter.
  • Sugar (optional): A small amount of sugar enhances overall flavor of the sourdough tortillas. It also helps active the bacteria in the sourdough starter.
  • Oil: Oil adds moisture and tenderness to the tortillas, making them softer and more pliable. It also helps prevent sticking during cooking. Common oils used include neutral-flavored options like vegetable oil, avocado oil, or olive oil.
  • Water: Water is the primary liquid used to hydrate the flour and form the dough. It activates the gluten in the flour, allowing the dough to stretch.
