Potato salad is a versatile dish featuring tender potatoes, boiled eggs, and pickles mixed with a creamy dressing, creating a classic and satisfying side for various occasions.
Every time I make this potato salad for anyone, they always want the recipe! Trust me when I tell you this is the BEST potato salad and its all thanks to a secret ingredient! One of my neighbors shared this recipe with me after I tried her salad and I make it every time now! One of the homesteads favorite foods I make.

Ingredients:
- Boiled Yellow or Red Potatoes: Serve as the hearty base, providing a starchy texture and absorbing flavors from the other ingredients. After boiling the potatoes, it’s your preference if you want to peel them or not.
- Boiled Farm Fresh Eggs: Add protein and a creamy texture, enhancing the overall richness of the salad.
- Carrots (optional): Offer a sweet crunch and vibrant color, providing additional texture and nutritional value. Make sure to dice the carrots into super small pieces.
- Celery (optional): Brings a crisp and refreshing element, adding a mild, slightly peppery taste and enhancing the salad’s crunchiness. Dice into small cubes.
- Red Onion (or Green Onion): Contributes a sharp and savory flavor, enhancing the overall taste profile; green onions provide a milder alternative. If you don’t have red or green onion, yellow or white onion will work as well.
- Pickles: Bring a tangy and briny flavor, along with a slightly crunchy texture, adding complexity to the salad. If you don’t have pickles but have dill relish that will work great.
- Cucumber (optional): Offers a refreshing and watery element, balancing the richness of other ingredients.
- Extra Crispy Bacon: Introduces a savory and smoky flavor, providing a crispy texture and complementing the creaminess of the salad.
- Mayo: Forms the creamy base for the dressing, adding richness and moisture to the salad.
- Horseradish Mustard (Secret Ingredient): Adds a unique spicy kick and depth of flavor, creating a distinctive taste in the salad.
- Mustard (optional): Contributes tanginess and a slightly pungent flavor, enhancing the overall savory profile.
- Salt and Pepper: Essential for seasoning, enhancing the flavors and balancing the taste.
- Paprika: Offers a subtle smokiness and a touch of color, enhancing the visual appeal and flavor of the salad.
- Garlic Powder: Introduces a hint of garlic flavor, providing depth and a savory element to the dish.
- Herbs: Any herbs can be used to add on top of the salad for a slight decoration. Dill, parsley, or green onion.
Note: Feel free to use what you have on hand, as the taste primarily comes from the dressing. Don’t worry if you’re missing some ingredients; the main components potatoes, eggs, pickles, and the dressing are key for the delicious flavor of this salad.
How to make potato salad:
- Boil potatoes. Peel and dice into medium pieces.
- Boil eggs. Peel and cut into small pieces.
- Fry up some bacon in a skillet or in the oven.
- Dice carrots, celery, onion, cucumber into very small pieces.
- Dice pickles.
- Add in mayo, horseradish mustard, yellow or dijon mustard, salt, pepper, paprika, garlic powder (add all to desired taste and feel).
- ENJOY preferably cold!

Ingredients
- 5 Boiled yellow or red potatoes
- 4 Boiled farm fresh eggs
- 1 Carrot optional if I don't have in on hand I don't stress it
- 1 Celery optional if I don't have in on hand I don't stress it
- 1 Red onion I had no red onion today, so I added green onion, therefore add any onion you have on hand
- 5 Pickles
- 1/2 Cucumber optional if I don't have in on hand I don't stress it
- 1/2 LB Extra Crispy BACON
- 2 tbsp Mayo
- 2 tbsp Horseradish mustard this is the secret ingredient, it adds a bit of a spice and most flavor!
- 1 tsp Mustard
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/4 tsp Paprika
- 1/4 tsp Garlic powder
- Herbs to top of the salad
