Ingredients

  • 5 Boiled yellow or red potatoes
  • 4 Boiled farm fresh eggs
  • 1 Carrot optional if I don't have in on hand I don't stress it
  • 1 Celery optional if I don't have in on hand I don't stress it
  • 1 Red onion I had no red onion today, so I added green onion, therefore add any onion you have on hand
  • 5 Pickles
  • 1/2 Cucumber optional if I don't have in on hand I don't stress it
  • 1/2 LB Extra Crispy BACON
  • 2 tbsp Mayo
  • 2 tbsp Horseradish mustard this is the secret ingredient, it adds a bit of a spice and most flavor!
  • 1 tsp Mustard
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 tsp Paprika
  • 1/4 tsp Garlic powder
  • Herbs to top of the salad

Instructions

  • Boil potatoes. Peel and dice into medium pieces.
  • Boil eggs. Peel and cut into small pieces.
  • Fry up some bacon in a skillet or in the oven.
  • Dice carrots, celery, onion, cucumber into very small pieces.
  • Dice pickles.
  • Add in mayo, horseradish mustard, yellow or dijon mustard, salt, pepper, paprika, garlic powder (add all to desired taste and feel).
  • ENJOY preferably cold!

Notes

Note: Feel free to use what you have on hand, as the taste primarily comes from the dressing. Don't worry if you're missing some ingredients; the main components potatoes, eggs, pickles, and the dressing are key for the delicious flavor of this salad.
