Dehydrating your sourdough starter can be a convenient way to store it for longer periods or to share it with others. You can store dehydrated sourdough starter for years!

Materials Needed:

  • Sourdough Discard: Very runny discard will work best for this vs active bubbly starter. About a week old discard.
  • Parchment Paper: Any parchment paper will work to prevent the starter from sticking to the baking sheet.
  • Baking Sheet: A large baking sheet to place the parchment paper on is needed.
  • Coffee Grinder: A new and clean coffee grinder, specifically used only for starter is a must. A blender or food processor would work as well. I recommend this coffee grinder, it’s small and makes the dehydrated sourdough starter the perfect consistency.
  • Container: Any airtight container will work, a mason jar with a lid, or a zip lock bag to store the dehydrated starter.

How to dehydrate sourdough starter:

  1. Pour your sourdough discard onto parchment paper. Spread it thinly and evenly using a spatula or the back of a spoon. Try to maintain an even thickness throughout.
  2.  Place the baking sheet with the parchment paper and the starter trays with the spread sourdough starter into the oven. Leave the oven off and leave it in there for a few days. Check daily to see if it’s completely dry and no wet or gummy starter is left. (make sure no one turns on the oven). Depending on the thickness of the starter, it can take up to a week to fully dry.
  3. Break into small pieces and grind in your coffee grinder to a very fine powder like consistency.
  4. Transfer the dehydrated sourdough starter powder into a clean, airtight container. Store it in a cool, dry place away from direct sunlight. Properly stored, dehydrated sourdough starter can last for several months to years. You can also store it in the freezer, in a airtight container.
