The perfect holiday treat – walnut toffee crunch. Sweet, crunchy, nutty goodness in your mouth. Toasted walnuts covered in hard caramel. Don’t worry about making the caramel, it’s actually quite easy and doesn’t require any special tools.

Tools needed:
- heavy sauce pan for candy making
- parchment paper
- baking pan
- skillet to roast nuts
- silicone spoon
- candy thermometer
Ingredients:
- Walnuts: Any nuts will work with this recipe. Walnuts, almonds, pecans, hazelnuts or peanuts. They should be slightly roasted for that extra depth of flavor. Nuts should be crushed or chopped into small pieces.
- Sugar: Organic cane sugar will be best for this recipe.
- Salt: Makes all the flavors wake up and shine.
- Butter: Good quality butter like Kerri Gold will work.
- Vanilla: Adds a touch of flavor. Powder or liquid vanilla will taste great.
- Water: Helps dissolve the sugar, and then evaporates.
How to make the Toffee Crunch:
- Place a piece of parchment paper in a glass baking dish.
- In a skillet, roast the nuts for a few minutes to bring out that amazing nutty flavor.
- Place the roasted nuts on the parchment paper in the baking dish.
- In a heavy bottom saucepan, add sugar, salt, butter, vanilla and water.
- On medium heat dissolve the sugar and stir until all of the ingredients are well incorporated.
- The mixture will start to foam and bubble. Keep stirring. It will go through stages of colors from light (white) to latte, to caramel color. You can use a candy thermometer and remove the caramel from the heat at 300 degrees F.
- Once the mixture is a deep brown caramel color, remove from the heat and pour over the nuts on the parchment paper.
- Optional step: Add some chocolate chips on top of the caramel and spread it evenly.
- Let the toffee crunch cool completely overnight.
- In the morning break up the toffee crunch into pieces.
- Bring to any holiday party for that perfect holiday treat that everyone loves.

- 1 cup butter 200 grams
- 1/2 tsp salt
- 1/4 tsp vanilla powder or 1 tsp vanilla
- 1/3 cup water 60 ML
