Zucchini fritters are so easy to make and they make the most delicious breakfast or an afternoon snack. But wait, if you love sourdough just as much and have some sourdough discard that needs to be used up, this is a perfect recipe for it. Sourdough zucchini fritters are kid approved and a healthy option!

This recipe was adopted from Natashas Kitchen with an addition of the sourdough.
Tools you may need:
- Box grater
- Cast iron skillet (for a crispy fritter)
- Large bowl
- Mesh strainer
- Cheese cloth (optional)
Ingredients:
- Zucchini – If zucchini is in season, always try to get home grown. The home grown zucchini will have more liquid than the store bought one, make sure you really squeeze the most juice out as you can.
- Eggs – I always recommend farm fresh eggs. The eggs in this recipe holds everything together.
- Green Onions – Green onions add a unique flavor to the sourdough zucchini fritters.
- Flour – Use any all purpose flour or even bread flour will work.
- Sourdough Starter/ Discard – Unfed or fed starter can be used in this recipe.
- Baking Powder – Helps create air bubbles and more of an airy texture.
- Salt – Brings out the flavors. I recommend Mediterranean sea salt.
- Black Pepper – Adds flavor and some spiciness.
- Oil – Avocado oil, olive oil, sunflower oil, coconut oil can be used for frying.
- Sour cream – Serve sour cream with the sourdough zucchini fritters.
How to make sourdough zucchini fritters:
- Grate the zucchini on the box grater into the fine mesh strainer. Be sure to place a bowl under the strainer.
- Add salt to the grated zucchini and let it sit for 10 mins.
- After 10 minutes, squeeze out the liquid from the zucchini using your hands. You can also use a cheese cloth to help get the most liquids out as possible.
- Then add the rest of the ingredients. Be sure to mix after each ingredient added.
- Heat up some oil in the cast iron skillet.
- Fry each fritter for about 5 mins on each side or until crispy and golden.
- Enjoy with some sour cream, or any dip of your choice.

- 1/2 cup sourdough starter
- 1 tsp baking powder
- 1.5 tsp salt divided 1 tsp and .5 tsp
- 1/2 tsp black pepper
- oil
- sour cream
Instructions
- Grate the zucchini on the box grater into the fine mesh strainer. Be sure to place a bowl under the strainer.
- Add salt to the grated zucchini and let it sit for 10 mins.
