Filling Ingredients:
- 1 lb cottage cheese small curds and no salt
- 1 block cream cheese
- 1 cup sugar
- 1/4 tsp vanilla
Crepes Ingredients:
- 1.5 cups milk
- 3 eggs
- 1/3 cup sugar
- 1/2 tsp salt
- 1/4 cup oil
- 1 cup flour
How to make the crepes:
- Make filling, mix all the ingredients together with a hand mixer to get a cream consistency.
- For the crepes, blend all ingredients together in a blender.
- Fry each crepe for about 2 mins or until edges become slightly golden.
- Flip and fry for about 5 seconds, stacking the crepes on a plate to cool.
- Once cooled and you completed frying all of the crepes, spread about 3 tbsp of the filling on each crepe and roll.
- Cut in the middle of the crepe, then cut off the edges and place in a glass container to put in fridge.
- To reheat and serve, heat 1 tbsp butter on low and fry until golden.
How to serve crepes?
- Warm with condensed milk drizzled on top
- Whip cream
- Nutella and raspberry puree (or jam)
- Drizzle with honey
